Reader's Digest version : it is harder that you initially suspect, packaging is complex, you will need a video driver board, finding a battery package of the appropriate capacity with the desired dimensions will be a limiting factor and the Pi is totally the wrong form factor. Building one would be a great learning experience but an inexpensive Android tablet will be a much better packaged, and likely better performing option in almost all cases, if you want to actually end up with something that is ergonomically reasonable to live with, for many user cases. Certainly is the case for your described use case.

You can get a 8" Fire tablet for around $120 CDN and a 10" for under $200 CDN. There are cheaper solutions but they are reasonably built and almost universally available so make a decent reference point.

Only time a Pi based Frankentablet is the right answer (learning aside) is when you need a portable all in one solution that has the GPIO header.
