I really don't think anything has happened in that driver recently, the ov5647 is pretty long in the tooth these days so mostly people don't go near it. And your code looks absolutely correct to me, you're asking for the uncompressed pixel format ('SGBRG10') which is what you need.
So as I said, I don't really understand what's happening. If you set a fixed exposure and gain and just watch the preview images being shown on your Pi's display (if you have one), are those "wobbling" too, or showing any kind of corruption?
